Sun Root & Taro Root Soup

Ingredients:

  • 1 leek

  • 5 sun roots (peeled or unpeeled depending on preference)

  • 1 medium taro root, peeled

  • 4 cups chicken or vegetable broth

  • 1 tsp salt

  • 1 tsp white pepper

  • 1 clove garlic, minced

  • ½ tsp grated fresh ginger

  • ¼ cup coconut or cashew cream (optional)

Directions:

  1. Thinly slice the leek and peel the taro root and sun roots. 

  2. Bring broth to a boil and add vegetables, minced garlic, and grated ginger. Cover and simmer until veggies are soft, about 20 minutes.

  3. Let the soup cool and purée it in a blender. If it is too thick you can add more broth.

  4. Add salt, pepper, and cream of choice (if using). Garnish with chopped green onions.
