Sun Root & Taro Root Soup

Ingredients:
1 leek
5 sun roots (peeled or unpeeled depending on preference)
1 medium taro root, peeled
4 cups chicken or vegetable broth
1 tsp salt
1 tsp white pepper
1 clove garlic, minced
½ tsp grated fresh ginger
¼ cup coconut or cashew cream (optional)
Directions:
Thinly slice the leek and peel the taro root and sun roots.
Bring broth to a boil and add vegetables, minced garlic, and grated ginger. Cover and simmer until veggies are soft, about 20 minutes.
Let the soup cool and purée it in a blender. If it is too thick you can add more broth.
Add salt, pepper, and cream of choice (if using). Garnish with chopped green onions.
